Luis Carlos Urrego is a second generation coffee grower in Urrao, a municipality in Antioquia, Colombia often considered to be the birthplace of the Chiroso varietal. Urrego grew up on his family’s farm and learned the art of coffee production from his father. 20 years ago he decided to move closer to town and sold the family farm in the process, but his love for growing coffee remained strong. 7 years ago, Urrego purchased a 2-hectare plot of land, which he named La Ilusión, and began cultivating Chiroso and Caturra varietals. In addition to his passion for cultivating coffee, Urrego is a lover of old cars, and runs a car workshop in town.

We’re very excited for our first time featuring coffee from La Ilusión. For this lot, ripe cherries were picked and immediately depulped, then submerged in water to ferment for 16 hours. After, remaining mucilage was removed from the seeds, and they were laid out to dry on raised beds for 13 days. This coffee has a creamy caramel-like body, silky mouthfeel, and a bright honeycrisp-like malic acidity. We get a milk chocolate sweetness that reminds us of the tasty Colombian treat Chocoramo.

All our roasted coffees are run through an AI-powered optical sorter. This extra step ensures that you receive only the most nutrient-dense, flavorful coffees from each lot. The machine is also capable of removing any foreign objects (corn, metals, rope, to name a few) from the rest of the coffees.

The higher the percentage, the more coffee is being removed in order to achieve a truly pristine product. We liken this to how sake-makers "polish" during production in order to reach a higher-quality product.

Nothing goes to waste: the rejected coffees are re-roasted and sold to local markets.

Chiroso

Originally from the region of Urrao, Antioquia, Chiroso is thought to be a mutation from Caturra. Known to some as the "Pink Bourbon" of Antioquia, Chiroso's stand at the world stage for their clarity and intensity of expression.
